A York shop owner whose sandwiches have been described as the ‘best ever’ has taken up a new role.
Tim Jervis launched Italian-inspired Salt Pig Sandwiches on Fossgate in October 2025.
Since then it has attracted widespread acclaim. One customer said on Google reviews: “This is the best sandwich I’ve ever had!”
Another said: “Possibly the best sandwich I have ever eaten. Very reminiscent of sandwiches I ate in Rome but these are even better.”
And a third wrote: “This is easily one of the most satisfying lunches I’ve had.”
Tim, who served in the Royal Engineers before launching Salt Pig, secured a £25,000 start up loan to open his premises.
He has now been named the 2026 Start Up Loans Ambassador for Armed Forces veterans after his business exceeded first-year forecasts.

The shop, which bakes its own bread and serves Italian-style fillings, now employs nine people and regularly operates at full capacity.
As an ambassador, Tim will share his experience with aspiring entrepreneurs, particularly those transitioning from military service to business.
He said: “Starting Salt Pig Sandwiches was a new type of challenge for me, but the growth we’ve had has made it all worthwhile.
“The start up loan was instrumental in the success of the business as it allowed me to open a premises in the city.
“I’m especially proud of the team we’ve built. My advice to aspiring founders is to back the skills you already have and learn as you go – waiting for the perfect moment only holds you back.”
The start up loans programme, part of the British Business Bank, has supported Armed Forces veterans with around 6,000 loans worth £65.9 million.
Tim is one of 14 entrepreneurs recognised this year as ambassadors, representing regions across the UK as well as specialist communities.
Louise McCoy, managing director of Start Up Loans, said: “Before launching Salt Pig Sandwiches Tim had no previous experience running this type of business.
“With the backing of a start up loan and a tremendous amount of dedication and hard work, he has built a flourishing business that is surpassing all expectations.”
Tim and the other 2026 ambassadors will be celebrated at a launch event this week. They will spend the next year sharing their knowledge to encourage current and future start-up founders.
