A new fine dining restaurant has opened its doors in North Yorkshire, offering an immersive tasting menu experience.

Calluna, located at Saltmoore in Sandsend, which was originally Raithwaite Hall, welcomed its first diners on Thursday October 15.

Led by executive chef Adam Maddock, the restaurant explores the flavours of the Yorkshire coast, kitchen garden and the wild expanse of the North York Moors.

Mr Maddock said: "Calluna is about creating a restaurant that belongs here.

"We're surrounded by an incredible landscape, the coast, the moors and the produce that comes from them and we want that sense of place to run through everything we do.

"The menu will continue to evolve with the seasons, so what guests experience in October will naturally change as we move through the year.

"It's been a long time in the making and I'm incredibly excited to finally welcome people into Calluna."

Named after Calluna vulgaris, the heather that covers the neighbouring moorland, the restaurant says it is deeply rooted in its surroundings.

Seasonal ingredients, preservation techniques and close collaboration with regional producers shape the evolving tasting menu.

The launch menu begins with dishes such as sea bream with toasted nori and pickled cucumber, and a mutton doughnut with pickled bilberry.

Black Sheep sourdough is served with burnt onion and beef dripping butter, cultured butter and beef tea.

Other courses include Fortunes with swede, pine and spruce tips; crab with kohlrabi and fermented turnip; and Mulgrave Estate venison smoked over bell heather and accompanied by black apple and celeriac.

A venison faggot with preserved elderberry and elderberry balsamic continues the menu’s journey through seasonal flavours and landscapes.

For an additional charge, diners can enjoy a cheese course featuring Baron Bigod paired with Yorkshire tea cake, damson and truffle.

Desserts include fermented cherry and meadowsweet, and milk chocolate with brown butter, dandelion coffee and yoghurt.

The menu concludes with Pineapple weed Canelés de Bordeaux and pear with juniper.

The tasting menu is priced at £125 per person, with an optional wine pairing at £95.

The cheese course is available as a £15 supplement.

Calluna seats just 24 guests each evening, with no table turns, promising an unhurried and highly personalised dining experience.

Guests begin their evening with a welcome drink in Saltmoore’s Lounge Bar before moving to the Kitchen Counter for the opening courses.

They are then shown to their tables for the remainder of the menu.

For those seeking an even closer connection to the kitchen, the 8pm Kitchen Counter seating allows up to six guests to enjoy the entire menu from the counter, with a front-row view of the culinary team in action.

Calluna is open on Thursday, Friday and Saturday evenings.
